I have just taken delivery of couple of cases of mixed sherries…and what a difference a year makes. Keep it too long and the freshness of a Fino or Manzanilla definitely wears off. I think that was the issue with last case of La Gita Manzanilla, finished off at last in March.
Last night a cosy half bottle of La Ina Fino which is full of zip, a certain tart dryness and an ever so slightly bitter finish. Yum.
I kept the order brief this year, all in halves except the Don Nuno Oloroso and the Peninsula Palo Cortado. That way consumption is more manageable and the freshness and zip assured.
What is there not to love? If I can just find the right olives…
