Ethical foie gras: A gift of nature

Le_Bonheur_est_dans_le_preSo I just received this from my brother in law: American chef Dan Barber relates his meeting with Spanish goose farmer Eduardo Sousa and the magical foie gras he produces.

I love foie gras, but it’s true, gavage does not bear too much thinking about. This is something to get excited about – I already sent them an email and am ready to order now, or reserve for the end of the year.

And if you haven’t, Etienne Chatiliez’s film Le Bonheur est dans le Pré is one of the very few French films I can watch again, again and again. Et pour un petit gooût.
